Palacinke - osnovni recept (Crepes - basic recipe)


If you fill crepes with sweet stuffing (jam, nutella, nuts, sweet cheese ...) then in the mixture you can add a little cinnamon, vanilla sugar (or vanilla extract), grated lemon or orange rind and rum, for better flavor. If you fill crepes with salty stuffing, observe the following ingredients.

Ingredients: 2 1/2 cups flour, 2 cups milk, 1 cup water, 1 cup of mineral water, 1/2 teaspoon salt, 3 eggs and a pinch of baking soda.

Preparation:
1. First, whisk eggs, then add the other ingredients. Stir and leave for half an hour in the refrigerator.
2. Crepes (pancake) pan coat with butter, pour the mixture and fry crepes.

Ako punite palacinke slatkim nadevom (marmelada, nutella, orasi, slatki sir...)

Rolat od piletine (Chicken roll)

Ingredients for the dough - 1/2 l milk, 3 tablespoons of flour, 4 eggs, salt, for the filling - 1 chicken, 1-2 onions, 2 eggs, 2 sour cream. 

Preparation: 
1. For the dough - Cook flour in the milk, like cream and mix until it has cooled. 
2. Add salt, well-beaten egg yolks, after that add well-beaten egg whites.
3. Bake dough at 200 C degrees in greased and floured baking pan. 

Cufte (Meatballs)

Ingredients: 500g minced meat, 4 eggs, 1 onion, 1-2 cloves of garlic, salt, pepper, 4 tablespoons oil, 1 cup warm water, 4 tablespoons flour, 1/2 pack of baking powder (5g).

Preparation:
1. Mix baking powder with flour.
2. Finely chop onions and garlic.
3. Whisk the eggs.

Lazanje s palacinkama ili lisnatim testom (Lasagna with crepes or puff pastry

Ingredients: 10 ready-made crepes or 1 larger or 2 smaller packs of puff pastry, the filling - 500g minced meat, 1-2 onions, salt, pepper, 100g of ketchup, the dressing - 2 sour cream (2x200g), 1/2 l milk, 200g shredded cheese (or crumble feta cheese), 3 tablespoons of flour, salt.

Preparation:
1. Sauté meat and onions as for the moussaka, at the end add ketchup, stir and remove from heat.
2. Arrange pancakes in deep pot or long pan (in two places pancakes) and fill each one.
3. For the dressing - mix all ingredients and pour over the lasagna.
4. Put into oven and bake at 200 C degrees for 15 minutes.

Note:
Puff pastry - larger package divided into 4 portions, smaller divided into two, and fill each and pour over dressing. Put into oven and bake at 200 C degrees for half an hour or until baked (depending on oven).

Sastojci: 10 gotovih palacinki ili 1 vece ili 2 manja pakovanja lisnatog testa, za fil: 400g mlevenog mesa, 1-2 glavice crnog luka, so, biber, 100g kecapa, za preliv - 2 kisele pavlake, 1/2 l mleka, 200g kackavalja (feta sir), 3 kasike brasna, vegeta.

Priprema:
1. Proprziti meso i luk kao za musaku, na kraju dodati kecap, izmesati i skloniti sa sporeta.
2. Redjati palacinke u duboku serpu ili u duzu tepsiju (na dva mesta palacinke) i filovati svaku.
3. Za preliv - sir izrendati, dodati ostale sastojke i preliti preko lazanje.
4. Staviti u rernu i peci na 200 stepeni oko 15 minuta.

Napomena:
Lisnato testo - ako je vece pakovanje podeliti na 4 dela, ako je manje podeliti na 2, pa filovati i preliti prelivom. Staviti u rernu i peci na 200 stepeni oko pola sata ili dok ne bude ispeceno (zavisno od rerne).

Rolat - Kuglice (Roll - Ball cookies)

Ingredients: black part - 200g walnuts (120g ground, 80g finely chopped), 180g sugar, 2 egg white, five bars of chocolate, white part - 100g butter, 100g sugar powder, 2 egg yolks and more - a bit of ground nuts.

Preparation:
1. Black part - melt chocolate, add nuts and sugar. Combine.
2. White part - melt butter in microwave, add sugar and egg yolks and put on stove to melt and unite the masses, and then remove.

Rolat sa sunkom (Roll with ham)

Ingredients: for the dough - 2 tablespoons of lard (margarine or butter), 5 eggs, 1 / 4 kg flour, for filling - ham in one piece 300g, 350g grated cheese, 2 sour cream (2x200g).


Preparation:
1. For the dough - whisk yolks, add the lard (butter) and flour, mix and finally add whites of egg whites.
2. Spread baking tray with grease (margarine or butter), pour the dough and bake.

Fil za oblande (Filing for the wafers)

Ingredients: 500ml milk, 200g sugar, 1 package of margarine (250g), some ground nuts (specify the amount as you wish), 2 bars of chocolate for cooking, 1pouch of vanilla sugar (10g) or 1-2 tablespoons of vanilla extract.

Preparation:
1. Whisk the butter with nuts.
2. Melt chocolate and add the vanilla sugar.

Kolac sa visnjama 2 (Cake with sour cherries 2)

Sastojci: 4 jaja, 4 kasike secera, 1 prasak za pecivo, 1 solja ulja, 1 solja mleka, 750g - 1 kg visnji (tresnji), 1-2 vanilin secera, 1/2 solje secera, brasno po potrebi.

Priprema:

1. Pomesati brasno sa praskom za pecivo.

2. Umutiti jaja sa secerom, dodati ulje i mleko i postepeno dodavati brasno-po potrebi (da bude srednje gustine tj. malo redje).

Kolac sa visnjama (Cake with sour cherries)

Ingredients: 5 eggs, 200g sugar, 100g butter (100 ml of oil), 200g flour, 750g - 1 kg of sour cherries (cherries), 1/2 cup sugar, 1 vanilla sugar (10g) or 1-2 tablespoons of vanilla extract, powdered sugar

Preparation:
1. Whisk eggs with sugar, add butter (oil) and flour.
2. Combine well, pour into a greased pan and bake.
3. Mix sour cherries (cherries) with 1/2 cup sugar and vanilla sugar.

3. Visnje (tresnje) pomesati sa pola solje secera i vanilin secerom.
4. Kada je upola peceno prekriti sa visnjama (tresnjama) i vratiti u rernu da se dopece.
5. Ohladjen kolac posuti secerom u prahu.

Slani puzici (Salty snails)

Ingredients: 1kg flour, 250g butter, 1 tsp sugar, pinch of salt, 1 fresh yeast (20g), 1/2 liters of warm milk, egg yolks, cumin.

Preparation:
1. In a cup of milk add sugar, yeast and let it rest.
2. Knead dough of flour, margarine, milk, salt and risen yeast.
3. Divide dough into 3 balls and develop with rolling pin.
4. Each round fold into rolls, cutting into snails half inches wide, aline in greased pan and let it sit for half an hour to an hour.
5. Before baking, brush them with egg yolk, sprinkle with salt and cumin.

Sastojci: 1 kg brasna, 250g margarina, 1 kasicica secera, malo soli, 1 svezi kvasac, 1/2 l mlakog mleka, zumance, kim.

Priprema:
1. U solju mleka staviti secer, dodati kvasac i pustiti da nododje.
2. Zamesiti testo od brasna, margarina, mleka, soli i nadoslog kvasca.
3. Podeliti testo na 3 lopte i rastanjiti oklagijom.
4. Svaki krug uviti u rolnice, seci na puzice debljine prsta, poredjati u podmazan pleh i ostaviti da odstoje pola sata do sat.
5. Pre pecenja premazati ih zumancetom, posoliti i posuti kimom.

Kiflice bez jaja 2 (Rolls without eggs 2)

Ingredients: 250g margarine (butter), 1/2 kg of soft flour, 1 cup of warm milk, 2 tablespoons sugar, 1 fresh yeast (20g), powdered sugar, 1 vanilla sugar (10g) or 1-2 tsp of vanilla extract.

Preparation:
1. Knead well the margarine with the flour.
2. In a cup of milk add sugar, yeast and let it rest.
3. When yeast rises, knead the dough.
* If the dough is hard to add a few more tablespoons of milk.
4. Make balls, develop with rolling pin, cutting into 6 sections, form rolls and bake.
5. While still hot roll them in powdered sugar mixed with vanilla sugar.

Sastojci: 250g margarina, 1/2 kg mekog brasna, 1 soljica mlakog mleka, 2 kasike secera, 1 svezi kvasac, secer u prahu, vanilin secer.

Priprema:
1. Dobro umesti margarin sa brasnom.
2. U mleko sipati secer i dodati kvasac.
3. Kada kvasac nadodje, zamesiti testo.
*Ako je testo tvrdo dodati jos koju kasiku mleka.
4. Praviti loptice, svaku rastanjiti oklagijom, seci na 6 delova, formirati kiflice i peci.
5. Jos dok su vruce uvaljati ih u prah secer pomesan sa vanilin secerom.

Kolac sa jabukama bez jaja (Apple cake without eggs)

Ingredients: for the dough - 1 cup oil, 3 cups shredded sweet apples, 1 cup sugar, 3 1/2 cup flour, 1/2 baking powder (5g), for sorbet - 250g sugar, 1 cup of water, for sprinkling - ground nuts.


Preparation:
1. For the dough - mix flour and baking powder, add oil and apples and combine well.
2. Bake dough in greased baking pan.
3. For the sorbet - frizzle sugar in a saucepan until is brown, add water and cook over low heat until the sugar has melted.
4. Baked cake overflow with dense sorbet, sprinkle with ground walnuts and cut into cubes.


Sastojci: za testo - 1 solja ulja, 3 solje rendanih slatkih jabuka, 1 solja secera, 3 1/2 solje brasna, 1/2 praska za pecivo, za serbet - 250g secera, 1 solja vode, za posipanje - mleveni orasi.


Priprema:
1. Za testo - pomesati brasno i pp, dodati ulje i jabuke i masu dobro sjediniti.
2. Peci testo u podmazanom plehu.
3. Za serbet - uprziti secer u serpi, da bude braon boje, dodati vodu i kuvati na tihoj vatri dok se secer ne istopi.
4. Peceno preliti gustim serbetom, posuti mlevenim orasima i seci na kocke.
